Two memory modules or four modules

So my motherboard has 4 RAM sockets but the xmp profile can only be used if I use two of the sockets. I have 2400 MHZ ram that boosts to 2666 MHZ with XMP. I currently have two ram sticks of 8 gb each. If I was to upgarde to 32 GB, should I add two more 8 gb sticks or two sticks of 16 gb allowing for the higher clock speed?

What CPU do you have? If you have a Ryzen CPU, I'd say get 2 sticks of 16 GB and try to get something with a higher clock speed than what you currently have (either 3200 or 3600 MHz). Ryzen CPUs benefit greatly from faster ram. For Intel it doesn't matter as much.

I mostly speak from my own past experience from similar problems. My solution may not work for you, but I'll always try my best to help as much as I can. If you want me to see your reply, make sure to quote my comment or mention me @WaggishOhio383, and I'll get back to you as soon as possible.

In that case, I'd say it's up to you. If you want to spend less money, get an additional 16 GB on top of what you already have. If you want to get some faster ram, and you like the idea of an easier upgrade to 64 GB down the line, then get all new ram.
