How much does background tasks affect gaming

I'm currently having second doubts as my 5600x could be taking another month to arrive while the 5800x is available right now and the rest of my parts arriving in a week or so...

 

I have a 3070 running a 1440p ultra wide 120hz monitor with a 1080p monitor above that I use to run chrome to be watching shows, NBA, YouTube while gaming. also frequently running discord and other chats. 

 

My question is, does having a 5800x offer any real-world benefit with the two additional cores to run these applications at once, or is the difference still marginal and not worth the $250 AUD price hike.

Also could the noctua u12s still adequately cool the 5800x?

Your streaming will be more gpu taxing.

You won't be seeing a reasonable difference between the two cpus with what you've told us

Also, when you play on 1440p, it puts more stress on the GPU than it would on the CPU at 1080p. Both should perform almost identically when streaming and gaming. 

 

The question is, do you want to wait for the 5600x?!

I think that is ultimately the real question and I'm clearly starting to try and convince my self by coming up with use cases of having 2 extra cores to justify the extra expense

You can always just check the Task manager; see what uses your hardware. That's what I do. 
Also, if able to, I always disable hardware acceleration in programs, so they won't take GPU performance. 

I do keep hardware acceleration in browsers though, cuz otherwise they will lag a lot.
