unstable Cpu temps

So, i was gaming and had realy bad fps drops out of nowhere sometimes i was wondering what it was checkt my temps and noticed that my cpu was 82 degress told. Was talking to My friends and they said i shut go and get a new cooler. Bought a new cooler put that on (never done it before) but obv checkt alot of vids on how to, anyway after i put on my new cooler my temps are even worse and pretty unstable while idling they are going rapidly up between 45-78 degrees and while gaming it was at some point 89 degrees and also shooting up and down quiet alot. so i was wondering if i did something wrong with the installation or somehting else might be broken maybe the temprature censor ? 

PC specs :

CPU : Intel I7 7700K

Cooler : coolermaster masterliquid lite 240

GPU : Nividia Geforce RTX 3070 Gigaybyte

Ram : Corsair 32 GB DDR4-3200

Motherboard : Asus PRIME Z270-P

PSU : 850 Watt

Windows 10 64 bit

This is pretty normal. The temperature sensor is part of the CPU, and does not break like this. If you want better temps, then set a more aggressive fan curve.

isn't like 78 degrees way to hot for a cpu for just idling and 90 degrees for gaming

That 78°C was a spike, presumably windows doing something in the background. Your actual idle temps are ~ 47°C which is fine. The TIM is particularly bad in this chips, which leads to difficulty in getting low temps. 90°C is perfectly fine for stock operation.

Is that graph at the bottom when the CPU is under load? if so your absolutely fine and that was probably a spike, if not make sure the screws aren't lose, the plastic film on the cooler is off, the CPU was cleaned of the previous thermal, and you reapplied thermal paste.
