Does anyone have a build for this price that I can run games on high settings for many years to come or should I bump my budget up?

10600k, 10700k, 5600x for cpu options.  

3060ti, 3070, 6800 (non-xt).  for gpu

All of the above will fit you budget and needs, finding them at MSRP (if at all) is the hard part.  If you do go with a 6800, pairing it with a ryzen cpu will also allow you to use it's smart access memory, which can give ~5% fps in a lot of games.

Which ones you can actually get your hands on will decide what's left in your budget, and thus the rest of the build.  Rough times.

Should run any AAA title at 60+FPS, and Esports titles will run at very high framerates (250+)
