upgrade your GPU when they are available again with at least an 8gb RTX

PNY GeForce RTX 2060 8GB Graphics Card - Office Depot like this?

And for what I'm using it for, do i really need 8gb? I also only have 75hz monitors.

not the best brand... but yes. ASUS EVGA or NVIDIA 2060 2070 are the cardmakers I usually stick to but MSI and GIGABYTE are usually decent as well. They are out of stock everywhere at the moment though.

If I'm not really doing anything that crazy and not overclocking, does this work? XFX AMD Radeon RX 5600 XT RAW II PRO 6GB GDDR6 PCI Express 4.0 Graphics Card RX-56XT6OFFR - Best Buy Again, this is only on a 75hz monitor, so do I really need that good of a GPU?

Get this, the CPU is hyperthreaded for better performance with streaming and editing. As for the GPU, the 5600 XT is fine and is around the speed of a 2060, but I would recommend waiting for the RTX 3060, RTX 3050, and also 6000 series AMD cards because they will be better value by far.

Thanks for the edits! I changed a few, but I'm wondering, what are the differences between the old Memory and the new one? And the difference on the processor? And I'm assuming there aren't any big differences on the SSD.
