Don't they always tell you to protect you from exactly those things?

Antivirus products can help mitigate an attack exploiting a known vulnerability only if the said AV is aware of the CVE. Remember that AV products is only as effective as the signatures it has, both local and cloud.

 

Let's not forget the fact that AV products are a double edged sword. Sure it can help protect you against known and some unknown attacks but these applications running at Ring 0 makes them a perfect candidate for RCE attacks [here] [here]
