Resetting to default in "/etc/default/grub" or in Grub itself?

Did you remove the "#" in front of "GRUB_GFXMODE" to uncomment it?

Did you update grub, "sudo grub-mkconfig -o /boot/grub/grub.cfg"?

Did you get the Resolution from Grub using "videoinfo"?

I'm assuming, based on this line, that before you installed the theme GRUB was fine.

We're going to need to know what exactly you did to install the theme because that's probably where the issue is.

 

Just as a starting point, what happens when you disable the theme and go back to default GRUB?
