Graphics card for first build

I don't know if this is the right place but in about one/two week, i will have a ryzen 7 3600x, 16gb ram on a rog strix b550-f wifi, but i don't know if i should wait for the rtx 3070 or buy an rtx 2060 ko, i live in Italy from the there's a price difference of 190€ so what you guys think about it? I should wait or not?

What kind of performance are you looking for? Resolution/refresh rate? Software/games?
