Hi people, I'm planning a build for when I start the university and combine it with some gaming, however, I'm not a hardcore gamer. The debate is that I was thinking for a Ryzen 5 3600 combined with a GTX1660 Super from KFA2, but after reading in some other forums someone suggested another one to choose a lees powerful CPU to get a higher end GPU and searching on some stores from Spain I found the Ryzen 5 2600X and the RTX2060 from KFA2 for 25€ more. 

I don't know if it would be worth paying that extra money so as I'll be playing at 1080p with a max. of 144hz. Also I don't know if the better CPU will be better than a greater GPU at long term as well as at rendering and 3D programs.

Sine you won't be gaming as much, I suggest keeping the R5 3600 and getting the 1660 Super is perfectly adequate for your needs and will do about 100fps +/- on most games at max settings. Rendering and 3D programs might want the beefier CPU and 2nd gen Ryzen is now 2 generations behind. However if you want 2nd gen Ryzen I wouldn't get a 2600X, go for a Ryzen 5 1600 AF it's a refresh of the original 1600 and is pretty much a Ryzen 5 2600.

Thank you for clearing me that, so it wouldn't be worth cutting corners on processor for my personal use for more graphics muscle as those kinds of programs are more CPU dependant?

They are mainly CPU dependent for video and photo editing/rendering but could use GPU assistance, the 1660 Super can in fact aid the CPU. But since you're off to university and won't be gaming a lot more GPU muscle isn't really important. If you feel like you need a stronger GPU the 1600 AF is still a 6 Core 12 Thread CPU that can be overclocked and will be more than enough for your needs, the choice is up to you
