I need a portable linux USB that remember the apps that i install and all my files.

Google Linux USB Persistence. It involves making a partition on the drive and setting it as a persistence partition, its a little more tricky than creating a normal USB but still fairly easy.

Main Rig:-

Server:-

Intel NUC running Server 2019 + Synology DSM218+ with 2 x 4TB Toshiba NAS Ready HDDs (RAID0)

you can use slax its a very good portable distro based on debian

if it was useful give it a like :) btw if your into linux pay a visit here
