Minecraft java itself used to chew up my 7600K with an overclock, so my inclination would be that you wouldn't be able to very well.

It seems to run well currently on my 2200g and could even run somewhat demanding mods on my 2 core laptop

I don't think minecraft servers need as much processing power as it does ram, especially if player count is low and it's modded.
