the wiping is no problem it just writes over the files of the win install 

If you have the Windows installation as an ISO, Yumi shouldn't edit it at all, just write files to mark it as an installation. You are scrolling down to the bottom of that distro list it gives you and choosing unlisted (Grub) right? Once it finishes, there should be a popup asking if you want to add more ISOs.

so i just got my 2x 32gb usb sticks in and i was wandering is there a programm that allows me to make this into an install usb stick thingy but then with multiple windows versions (server 2008r2 w7 w8)

YUMI has worked fairly well for me.

so i used that and i made a booteble thingy with windows install but the thing is it just writes over the previous thingy so there can only be one install

Well yes, once you reformat the drive it has to wipe everything. There should be an option through the process to select multiple ISOs.
