RAM Usage of a Computer

Hi, I have a kit of 32GB of Corsair Vegeance DDR4 RAM (Black) and I was thinking of upgrading to a nice kit of 16GB Trident Z RGB instead.

 

However, I noticed that on similar systems, my 32GB System used more RAM when using the same apps. Is it due to the higher availability of RAM allowing apps to use more RAM or is it just because my system tends to use more RAM for its apps.
