I don't have that gpu and I don't have much experience in undervolting gpu so others could correct me if I'm wrong.  The way I would do to test it would be to run different benchmark and some gpu demanding games to see if the gpu is stable under load.  Heaven, superposition, firestrike and such.  So start from where you are and try to lower the voltage bit by bit and test in between the voltage adjustment.  When you get artifact or it crashed it means that you've reached the limit and have to up the voltage one or two notches.

Going from 85 to 80 is a great but you should know that those cards runs hot from the start.  I'm not sure if the asrock have an efficient cooler.  You could try to find some video about that cooler efficiency.  Gamers nexus does some great gpu testing so I suggest you search there first.    Try to see if you can manage to bring more cool air to the card and remove the hot air from the case by adding some fans if it's possible.
