which one should i get and WHY

2x8, you have more room for expansion later down the road, in case you want to get 32GB total. Not quite likely, but I don't see any real advantage of using four modules over two.

2x8 for the same reason and also less chance for a stick to fail

not only that, you get *marginal* increase in performance if you are using a dual channel mobo with 2x8 ram modules.
