This build is for gaming and video editing 

What would you change?

Change i7 9700k to i9 9900k. Get rx 5700xt. Get at least 32gb ram.

2070 super is better than the 5700xt. Also, 16gb are usually enough, but I agree tah 8gb is not enough and dual channel is mandatory.

5 to 10 fps more for another $120ish more. Rx 5700xt is no far behind than rtx 2070 super. You can spend that $120 for another 16gb ram kit.

The ram is 8gb x2 =16gb

and will be upgrading it in the  future if needed
