Sure
if the monitor doesn't have this feature, you could even configure that monitor to run 1440p but display 1080p (scaling options in the driver), so that monitor won't stretch image vertically.
I remember I was able to combine a 1920x1200 and a 1920x1080 monitor and run something at 1920x1200...
