Hey guys,
I work for a leading WordPress theme company, making their documentation and videos. My current PC has a crap motherboard, and I've been having some issues, and it's already 3 years old, so looking at building a new beast. Would love some advice. I'm in Australia, and my budget would be up to $3000AU, excluding monitors. I already have two 27" 4K monitors, and they are very nice.

So,
CPU: At the moment I have a Intel Xeon E5-2683 v3 ES. It's good at multitasking, but I'm not at all sure this is the right CPU for the job. I'm wondering what the sweet spt CPU is these days? High level i7?

GPU: I'm not a gamer, but I do render videos all the time, so I need something that won't break out in a sweat rendering 4K video. I have 2 4K monitors, so I'd like a graphics card that has 2 display port slots.

MB: I need advice here but I usually go for mid range Gigabyte boards.

PSU: Nothing fancy, but I want this to do the job. It's going to be running lots of HDDs and 2 screens etc. Currently I have a Corsair RM750i, and have had no issues with it.

RAM: I think 32GB should do the job? DDR4 or is that now outr of date? Currently I have CORSAIR Vengeance LPX 32GB
HDD: I have a Samsung 950 PRO MZ-V5P256BW 256G M.2 SSD Solid State Drive but I think I should get a bigger one. 1TB is they are getting cheap enough.

HDD: I also have a LOT of storage needs. I want a minimum 2 x 4TB good quality drives. 
CASE: Nothing to fancy. I have a NZXT H440 2015 Edition Mid Tower Case which is nice enough.

PERIPHIALS: I want a GOOD mouse and Keyboard (not a gaming one) and a decent webscam as well. New speakers as well, 2.1 are fine.

OS: WIN 10 but I am also thinking of running MAC OS on some sort of VM. Make sense? Are there any isseus rendering videos when using a VM? 
BACKUP: This is the hard one. I have a MyCLoud EX4 NAS but it's shit, and I don't even use it. I want a reliable backup solution! At the moment I have sx4TB HDD is a RAID array inside my box as a backup but I don't think that's incredibly secure.

Any advice much appreciated.

COOLING: Forgot to add. I'm currently using a Corsair Hydro Series H100i v2 for cooling, but I've already had a replacement under warranty, and I woulnd't get another one.

For rendering, HEDT platforms like Threadripper and Skylake-X. Both platforms are in the process of launching new stuff tho, should see the full of them in action in November or December.

Depends on software. Some are purely CPU based, some can benefit a lot from GPU acceleration or even letting GPU handle most of the work, others somewhere in between.

Boards are also not uncovered yet for the new CPUs. Among existing boards MSI has a slight advantage on mid range X399 boards (for Threadripper) and Asus does better on X299 (for Skylake-X and its refresh). X299 boards are compatible with new Cascade Lake X, the replacement for Skylake-X btw but it's not clear for next gen Threadripper.

We're still on DDR4, and DDR5 won't be coming next gen either as server platforms are also still on DDR4 and they get newer memory standards before consumer platforms.

 

What cooler are you using? X299 uses socket LGA 2066 which has the same cooler standards as LGA 2011 and 2011-3, but Threadripper uses TR4 socket with its own cooler mounting hole standard.
