Video conversion Help!

Very new to video conversion but learn fast. 
I was given a project by my family for my uncles funeral to make a memorial video but everyone is sending some serious random formats. From phones old and new, facebook videos, vhs to dvd files etc. 
I want drop 200 or so files through handbrake and just convert them to .265 but at the max resolution of the original file as converting 240 and 480 to 1080 does nothing to quality but increase file size. 
Is there a way to do that or am I asking for too much.
