Will the RAM be good at the speed? And things will fit in the case?

I'm planning to find used R5 2600/3600 later on and GTX 1070+ or newer

What tools will I need for first build? Just set of screwdrivers??

Number 2 Phillips is generally all that is required.

Are two WiFi adapters really needed?

80+ ratings certify electrical efficiency. Not quality.

Instead of a separate WiFi adapter, you could save a bit going with a motherboard that has WiFi, Gigabyte B450 AORUS PRO WIFI (rev. 1.0) ATX AM4 Motherboard.

That board is ~200 $ comes up about the same as Pro4+WIFI card. I read dedicated WIFI is better
