1 GPU, 2 different resolution monitors?

I was wondering if this is even possible...

 

I have 2 gaming systems, going to sell one and focus on just the remaining higher powered one with a 1080 Ti in it.  I have two nice gaming monitors, one is a 27" Asus IPS 1080p@144Hz and the other is a 32" Pixio VA 1440p@165Hz.  What I would like to do is hook both up to my 1080 Ti via Display ports and game on both monitors, one at a time, depending on the game and what I want.  If I want high FPS or use Ray Tracing, I'll use the 1080p montior.  But if I want higher resolution and/or a bigger screen, I'll use the 1440p monitor.  But how would one pick the monitor that a game plays on, set it as the Windows default before launching the game?

Some games will allow you to change which monitor to use. Otherwise the game launches on which ever monitor is marked as the main one in Windows' display settings.
