Hard drives keep going missing

Recently my computer has been acting funny ( say recently since December actually)

I have an M.2 Drive, 2 HDDS and an SSD plugged into my PC. Before December it was working great. After that my hard drives went missing from the bios and from windows.
A messed around with the insides for a while and they showed back up and all was good again.

Then 2 nights ago my PC essentially refused to shut down. I powered down and 5 mins later the fans were still going, the RGB was still lit and the hard drives still spinning. At this point I just powered down from the wall.
The next day the hard drives were gone. After so long I ended up swapping out the sata cables and boom it worked.
HOWEVER

After having to do the same thing last night I have awoke to my PC only finding both the M.2 and the SSD. Anyone know what the issue may be?
