I currently have a GTX 760 in my computer with a ryzen 5 2600. These are put into a MSI b350 tomahawk. I was wondering if I could buy a GTX 750TI and put it in my computer because the MOBO has crossfire. Would it be possible for me to have the 750TI encode and the 760 game or would I be better off buying a good gpu like a 2060

No, you have to have two of the same gpu's, but even if- most games don't supports SLI anymore, or they do but not very well.

Just run with a single card

Yes the 750 Ti can be set to encode while you game on the 760. just make sure you set the 750 Ti as the encoder in your software, and the display is hooked up to the 760

Ok thanks, I was wondering if a 750TI would be sufficient for encoding
