I have an AMD FX-6100 (I know I may need an upgrade soon) clocked at 4.0 Ghz @ 1.3125 Volts and I am getting 54C in AIDA64 but when I run Cinebench I get 63C.

Can anyone explain me why is there such a big difference? Also, what do you think is more accurate as a thermal test?

Different stress testing algorithms. The most accurate test is just doing what you're going to be doing with the CPU, the stability in stress tests really doesn't matter to be honest. I've had plenty of CPUs that were fine for many hours in stress testing, only to crash frequently in games, and some that would crash in stress testing but were perfectly fine in games.
