Are there any barebone am4 nuc like pc like the asrock deskmini?

Usually mini pcs have soldered cpu sockets that are very difficult/impossible to replace.

Maybe build a mini-itx pc in a case like the Fractal Design Node 202, that is pretty small

there is udoo bolt, but is not a socketed solution, it is soldered

there is a case that doesn't look like the nuc, but serves same purpose

 

nuc is nice but expensive and limited, this one has better gpu
