    Nvidia this generation is better than AMD's current generation., just because Ampere (RTX 30 series' architecture) maintains its advantage over AMD's RDNA 2 better at high resolutions (i.e. pixel counts). This wasnt the case back when it's Pascal (GTX 10 series) versus GCN 4.0 (Vega), so you shouldnt consider using the company.

    The power supply outputs 12v , 5v and 3.3v - it doesn't care what you connect to it.
     
    A laptop display will not consume more than 10-30 watts (depends on brightness), which is really low for a power supply.
     
    What you have to do is figure out the voltage that controller board needs and what connector it has.
    If it's 12v you're good to go, if not you may have to get an adjustable dc-dc converter powerful enough for the controller.
     
    You can buy some extension or adapter cable with a molex or a sata connector at one end, cut the extension/adapter cable in the middle and now you have the 12v , 5v and ground wires. You could solder them to the input points of the controller, or you could get the connector that goes into the controller and connect the wires.
