And if they boost performance, how they do it?

When I was in the toilet, I began to wonder how and if any drivers can improve or even increase the speed of the device (eg graphics card)

By downloading drivers from, for example, NVIDIA or AMD, we can read in the change logs about "improved in-game performance".

But how it happens that this performance is really improved (if it is) and how the drivers do it, or the people that these drivers create.

It can sound weird, but think for a minute, how do they do it?

Driver updates that improves performance, are just efficiency improvements in the way "the game talks to the gpu"

You can imagine the drivers being literal drivers (as in, person driving the car). When you are racing obviously it matters which car is more powerful (hardware) but the person driving the car has the final say over how that hardware is being utilized.
