8600k is more than enough for gaming.

U don't need 12 threads for gaming.
Even 6 threads is more than enough :D

Depends on what you're doing. If you only plan on gaming, get the 8600k.

Yes it matters, you will get better average fps and less stutters when pairing a good CPU with a high end GPU. If you were to use say a Pentium G4560 with a 1080TI in 1080p (even 1440p) you won't be utilizing the GPU 100%. There will most certainly be stutters and dropped frames.
