This is my first time building a PC on my own.  This is also my first Desktop in about a decade. I wanted it to be a bit of an all arounder but considering this is my first build I wasn't sure if my parts selection was optimal.

Aim

I need it for editing with Adobe Premier, Photoshop and After Effects with some potential gaming and even streaming from my xbox. Nothing too crazy gaming wise (stuff like Call of Duty, GTA V, maybe Tomb Raider? Nothing competitive just casual) I'll be honest I don't know too much about how demanding games are on PC, but I plan on playing emulators (I don't think that should be much of an issue).

Budget

I'm in the US and my budget is $1600 with $1800 after tax.

Monitor

I picked Asus VG278Q 27" for size, Eye Care, FreeSync/Adaptive Sync , thin bezels, good refresh rate, and ports.  I plan on using it for my console as well.  Im settling for a refurbished one at a cheaper price.  This isn't included in the build budget, but for a monitor I'm willing to spend $250. I need 2 of them for a dual monitor set up so if there is anything out there that offers what this does with a lesser price then I welcome some suggestions.

Peripherals

A good wireless mouse suggestion would be appreciated anything $20-30 and under (must be black). For the keyboard I'm going with Logitech Craft for editing. I like the design and thin look with the backlight.  Anything that looks close enough and is wireless with backlight would be good for about $150 (must be black).  This is also not included with the build budget.  Also if anyone knows of a good Keyboard mat with wrist rest and mouse pad (also black).

Somethings I needed like the motherboard with built in wireless and bluetooth and the i7 8700k.  I was unsure mostly about the SSD, RAM, Video Card, and cooling.  I wanted at the least a 1070 Ti but wasn't sure if I needed or could get better RAM or SSD for the price.  Do I have enough cooling and ventilation and also am I missing anything?

If I can somehow end up with a more powerful build for the price that would be amazing. This is also my first time using a forum so I apologize if my post is unclear or if its difficult to understand what I'm going for here.

Here is the build I picked out:

Not sure where your budget went exactly

Did you already buy the monitor?

Really hard to beat the R7 1700 at $200 IMO

And if you're getting a free-sync display you might as well get Vega 56 now that the price is almost normal

Should also get a case that actually has airflow, isn't that case sealed off at the front?

I edit my posts a lot, Twitter is @LordStreetguru just don't ask PC questions there mostly...

Spoiler

What is your budget/country for your new PC?

what monitor resolution/refresh rate?

Consider the locked i7-8700. With any load the cpu is within 100 MHz of a stock i7-8700K.

Coffee Lake i5 and i7 stock memory speed is DDR4-2666.

Unless you really need 2TB of storage, I'd suggest simplifying storage and going with a single 1TB ssd.

For editing tasks an IPS monitor that is color calibrated would be a good choice. Instead of getting two 1080 monitors, consider one with 3840 x 2160 resolution, a bit more area than two 1080 monitors.

80+ ratings certify electrical efficiency. Not quality.
