I get an error: Kernel Power, event 41, task 63.
I built my PC at the end of 2016 for gaming, and a couple months later, while playing games (and only when playing games), the PC just begins restarting on its own. Looking in the event logs I found the error I named above coinciding with the times at which the PC restarted. 

My specs: 
-Intel Core i5-6500 @3.2Ghz
-Cooler Master Hyper 212 Evo
-MSI H110I Pro AC LGA 1151
-HyperX Fury DDR4 2x4GB 2133
-(x2) Intel 320 series 160GB SSD
-Kingston SSD 120GB
-Western Digital Blue HDD 320GB 7200 RPM
-Asus ROG Strix RX 470 4GB OC
-EVGA 500W B1 80+
-Thermaltake Core V21 Case

The curious thing is that this only happens while I'm gaming, and very specific games only, with nothing really in common. 
Doom (2016) restarts at certain points in the campaign or around 30 minutes in the multiplayer; Metro 2033 Redux only restarts at certain points in the campaign, not letting me progress; Hollow Knight restarts around 8 minutes in-game, Deus Ex: Human Revolution, in the first level; Dauntless, only in the main hub, around 5 minutes of staying there; Overwatch, only when attacking in Watchpoint: Gibraltar, yet in some rare cases it restarted on the menu; Naruto Shippuden: Ultimate Ninja Storm 4 restarts always at the tutorial level; Warframe restarts around 5 minutes in-game; and some many more games. 
You would think that this has something to do with my PC not keeping up with the games, yet I can run the Witcher 3: Wild Hunt at high settings and 80fps for hours and hours, and it has never restarted on me.

The reboots ended up messing the system and I had to reinstall Windows.
Only thing I can answer for sure is: Is it a Hard Drive problem? No, they have all been stored on different drives.
In the beginning, I thought it could be a PSU problem, but realized that the PC never actually lost power (because all of the lights in the system stayed turned on at all times). Now I'm not so sure I can discard the PSU, since it's been turning off completely, and the starting again, like after a blackout. I tried updating drivers, even erasing some, like the sound drivers; uninstalling and reinstalling, even in different drives; plugging in the PC into different sockets around the house and with different extensions; changing RAM to a different socket; reconnecting cables; running the games in compatibility mode; changing the CPU fan and thermal paste. Stress tests show everything is stable and functioning correctly.
The only actions that brought me some kind of change were running in compatibility mode and plugging it in somewhere else. In Hollow Knight, I found that running it for Windows 8 increased the play time to around 15 minutes, whilst running for Windows 7 made it so that the system restarted almost immediately upon starting a new game. Plugging it in differently let me get past the same point where it always restarted in Doom and Metro 2033, but later found out that it just "moved that point further."

I've been to some PC repair shops, but none seem to offer any solution, even said my system was in perfect conditions.
