What I'm thinking is more ram, but then how mush and of what?

An i5 8600k with z370 mobo or R1600 with b350+

and either 1070 or 1080

with a 3440/2160 * 1440 p display

What are you using it for because that will determine whether you should upgrade the cpu or gpu. Personally I would recommend a cpu upgrade first as it will make the compute quicker in everything not just gpu intensive applications.

System Specs

CPU: I7-5820k   MOBO:Asus X99 strix   RAM: 32gb corsair Dominator Platinum 2666mhz   GPU: Gigabyte G1 Gaming 980TI  PSU: Corsair RM1000i

Well, my thoughts was to first upgrade cup, as I'm only gaming on 1080p right now, and then buy both a monitor and a gpu later.

If you are primarily gaming, the upgrade to z370 might not be worth it.  The extra cores don't effect gaming as much as speed and the upgrade to 4K doesn't tax the CPU as much as the GPU.  You're money is best spent on a 1080ti and a 6700k/7700k.

Now if you want to spend the money and start all over with something new then z370 is good, but z390 and 8 core intel (think 8800K) will be out this year.  I betcha.
