240mm is overkill for a locked 8700.

Not really. Even a locked processor will still work up some heat when under load.

 

And having the extra radiator space will give you the chance for a quieter rig overall since you'll be able to run the fans a slower than you'd have to on a 120mm rad.

 

Could you get away with spending a lot less on the cooler for your processor? Maybe.

But there are benefits you'd be trading.

If a 240 rad (or maybe something bigger) fits in your case i would go for it. You can decrease the fanspeed and therfore have a quieter system. A single 120 should be sufficient If you don't overclock.
