Storage Help!

I'm starting a new build to replace my gaming machine. My old machine was destroyed when a pipe burst in my house, and after many many weeks of crying myself to sleep I have finally discovered the strength (and the cheque from my insurance company) to build a new machine.

 

My planned components are:

 

CPU - Intel Core I7 8700K

Motherboard - ASUS ROG Maximus X Code

CPU Cooler - Corsair H115i Pro

RAM - 32Gb (4x 8Gb) Corsair Vengence LPX DDR4-2666

GPU - ASUS STRIX 1080TI

Case - Corsair 750D Airflow

PSU - RMx 850 80+Gold

 

Now it's my storage I have a couple of questions about specifically about RAID. I plan to get 2x Samsung 960 250Gb NVME drives and use them in a RAID 0 config where I'll install my OS onto, 3x Samsung 850 EVO 500Gb SSDs and have them as individual drives for various projects and I also plan on using 5x Seagate 2Tb SSHDs as my archive/backup but I'm not sure what RAID to use for them. I'm thinking RAID 5 but I've got a little voice in my head saying RAID 10. Any ideas?

You dont really need raid. For the OS just get one SSD. Dont get SSHD, just get normal HDDs, and sure raid 5 could work but ehhh
