I use a server board as a daily driver, and as a result I'm using ECC memory in it, 14gbs of it. Does the use of ECC memory vs non-EEC memory have an appreciable real world effect on system stability while being left running for long periods of time?

The only thing ECC memory will improve on the reliability spectrum are bit-flips due to hard errors (like the old joke we say here about that cosmic ray hitting the exact bit and changing its state). It does not help with poorly written software.
