I'm mining litecoin with a pool and on the dashboard it says round estimate what does this specifically mean?

It is an estimate of how many you will get. rounded to the nearest whatever..

You're likely on a PPLNS pool which is a Pay Per Last N Shares. The "Round" is the time between the pools solves a block. The estimate is how much you would get from that block if it was solved right then. PPLNS pool payouts are based heavily on luck, if the pool solves a bunch of blocks quickly, you will earn more. If the pool is unlucky and doesn't solve a block for a while you will be paid less. If a block time runs long enough, you won't get credit for work done at the start of the block as it may only keep track of a certain number of N shares.
