I have a complicated question (to me at least) how a particular setup works on the z270 ROG Apex

I am looking to do a SLI (1080ti) setup and use the DIM.2 board with two 512gb 960 pro's in raid 0 after this how many sata HDD's could be connected and would any sata ports be disabled from the m.2 raid?

I have no additional cards to run other than whats mentioned above, comparing z370 to 270 is there any disadvantage to this setup or would it run better on the newer one or is there no difference between them as far as this goes.

That information would be in the manual, I think Asus has downloadable versions of it on there site. Head to Sata section / M.2of the manual it will state if anything is disabled. Sometimes it disabled pcie lane instead of Sata port or X pcie/slot will share bandwidth.

I doubt there going be any difference, If there is it will be minor.

Current Build: Project Frost
Gaming Rig Build: Project Ice Dragon

I looked and did not see anything in there except on how to install a SATA drive, maybe giving technical support a call someone can answer that at Asus.
