To be honest, the capacity is going to be more of an issue than lacking dual channel - I'd recommend sticking with the single 8GB stick for now unless the 2x4 kit is a lot cheaper. 

 

This will give you the best opportunity later on to upgrade further if you need/want to.

If you're okay with 19 GB less storage, there are quite a few sub-$80 256 GB SSD you could get. You can also get slightly cheaper RAM with similar specs, too.

 

You're also missing a case. If you already have one, you can ignore this particular comment, but if you don't, you may want to get one. I derped.

 

For this build, I used parametric filters. They're quite helpful for finding good deals for parts that have whatever specifications you enter into PCPartPicker. Personally, I'm not fond of the bright white color of the memory it picked, though, but it is a little cheaper.

The case he's using is listed under "other", so that build you posted now has 2 cases on it. :)

 

However, good shout on the ssd and ram pricing, if the case you added is taken off the bill, it gets REALLY close to being able to fit another 8GB ram into the build.
