This is my current list. I want to try to upgrade it to an i5-8600k with a stronger cooler for overclocking, which is around 130 CAD more, without adding much to the current prices. Would it be a good idea to reduce the RAM to 8GB DDR4-3200, which I can upgrade later, and perhaps buy a slightly less expensive monitor?

IMO yes. Unless you do some RAM-heavy stuff, 8GB is still good enough.
