1. I would recommend using pcpartpicker.com and making a list, easier for everyone.

2.  I pretty much always recommend getting the better single card.  If you need more power later you can pair up your original card, if you start in SLI you're pretty much stuck

 

EDIT:: Plus, SLI can raise it's own whole suite of issues, if you're comfortable with troubleshooting that, go ahead, but I still think you're better served starting with the best single card you can afford, and if necessary later adding SLI. But understand SLI is an enthusiast feature, and compatibility can be poor at times.

Personally I would just keep the 1060

I totally agree, one thing to note in this case though is that 1060s cant be used in SLI

Ah, So you did! I stand corrected, I must have skimmed past it in the all the part lists.

Ah, true.  I forgot Nvidia removed that feature.  I would still say single card though.
