Need help with my PC build

It has been some time since AMD released their R-series and Threadrippers. Intel responded with new i9 chips and 8th generation of i7,i5 and i3 chips. 

Ive been planning to buil a good PC, but since Im pretty noob I kindly ask u guys to help me with my build. 

 

Now, I kindly ask u guys to recommend me a good GAMING build which will allow me to play games in 1080p and 1440p.

 

- Im gonna get GTX 1080 for free (Palit or MSI Gaming X 8GB) so I need a good CPU, PSU, Ram, motherboard and cooling.

- Im not really intresting in overpowerd builds with SLI threadripper or i9 procs, just a good parts to pair with my GTX.

- I might get into overclocking and streaming someday so please take it to your consideration. 

- My budget is up to 1000 euros

Didn't know any computer stores in Poland, so I used Komputronik. Prices should be similar in other stores anyway?
