yes

just run the server starter once for each game server.

Ryzen 5 3600 stock | 2x16GB C13 3200MHz (AFR) | GTX 760 (Sold the VII)| ASUS Prime X570-P | 6TB WD Gold (128MB Cache, 2017)

Samsung 850 EVO 240 GB

138 is a good number.

Yes, you can.

Ubuntu Server will have better performance, Ubuntu Desktop is easier to use, especially if you're not familiar with Linux.

I'd suggest using the "Screen" utility if using Ubuntu Server, that way you can run multiple programs at the same time, and they won't stop if you're SSH'd into the server and disconnect from it.

Specs: CPU - Intel i7 8700K @ 5GHz | GPU - Gigabyte GTX 970 G1 Gaming | Motherboard - ASUS Strix Z370-G WIFI AC | RAM - XPG Gammix DDR4-3000MHz 32GB (2x16GB) | Main Drive - Samsung 850 Evo 500GB M.2 | Other Drives - 7TB/3 Drives | CPU Cooler - Corsair H100i Pro | Case - Fractal Design Define C Mini TG | Power Supply - EVGA G3 850W

Console is obviously more efficient, as PC doesn't have to deal with processing any graphics at all (except text, but that's almost nothing).

But you can try to start it off using GUIs, and then move to the command line when you're more comfortable.

Want to know which mobo to get?

Spoiler

Choose whatever you need. Any more, you're wasting your money. Any less, and you don't get the features you need.

Only you know what you need to do with your computer, so nobody's really qualified to answer this question except for you.
