So, I'm interested in using VeraCypt for full disk encryption for a drive that triple-boots macOS, Linux, and Windows OSes. Just wondering if this has been done before and if so, is it hard to setup? I have a few ideas on how it's done, but I'm not sure if I have the right options in mind.

It shouldn't be hard to set up as far as I know. There's a post about System Encryption here. It should just be a matter of passing pre-authentication, then it will work like a regular drive. 

 

I personally don't use VeraCrypt for system encryption, only for containers, but that's my understanding of it.

Do you have an alternative to VeraCrypt or something? I'm thinking about looking at other options for full disk encryption.

Not that I've used. I find VeraCrypt works well for me so I haven't switch to anything else. Have a look at things like TrueCrypt. I believe VeraCrypt is based on TrueCrypt (or they're both based on the same source or something).
