Alrighty so I'm moderately new to the PC thing, and I want to know if I should be worried about these temps?

My cooler is The Corsair Hyper 212 EVO, my CPU is a 6700k, not OC'd yet.

temps at Almost* Idle are around 43c. Under load I have reached around 84 peak, usually 81 stable.

1. with things such as Steam, Chrome, Discord and Task Manager open.

Well your pc temps are highly reliant on your room temperatures, so if your room is hot then that will reflect in your pc temps. I generally keep my room at 24C and my cpu (i5-6600) sits idle anywhere from 30-35C with the stock cooler. My cpu should generate less heat than yours so take that into consideration too. However, if it isnt your room temps then maybe your cooler isnt sitting well ontop of the processor? Or maybe too much or too little thermal compound? Hope this helps :D
