Every time I shutdown my pc there would be the option of update and shutdown which I do. Once the update is done I would turn on my pc the next day and it would not install so it would say something about windows undoing the changes since it could not install. This has been going on for pretty long, maybe 2 weeks. It doesn't affect anything with windows its just very annoying how when I start up my pc it takes longer than usual because windows has to undo this update. I have windows 10 pro btw

Try manually downloading the update from the MS website.  Disconnect or disable any and all network connections.  Use the following instructions:
-Click on 'Start' and type- services.msc
-Scroll down and right click 'Windows Update'
-Select 'Stop'
-run manually downloaded Update

Reboot, then reconnect network devices.  Let us know what happens.

I'm also not sure if it's an option off the top of my head for Win10, but in Win7 in order to properly install manually downloaded updates you would have to choose "never check for updates" in windows update settings. Reboot, then install the manual update.

I've done it but now when I sign in I can only use my computer for about 2 mins before it restarts by it self. I have no clue why it keeps restarting

This guide should help you and isolate or identify what's causing the issue:

At the least it'll allow you to identify the error code you're getting and causing the reboot.
