How does Shadow Copy help recover data?

I'm trying to learn how Shadow Copy works and how it can be used for data recovery but I am having trouble understanding it. I have read the wikipedia article the the Shadow Copy page on Microsoft's technet website but I still don't get it.

 

Would any of you be able to explain it for someone who is learning?

Thanks for the link, but I still don't quite understand how it helps with data recovery, do you know of any articles that explain that?
