I just bought an NZXT Grid fan hub thinking that I can plug a single header from my motherboard into the input port, and then power fans off that. However it looks like the only way to power it is with the molex to 3 pin adapter they give you. So will the fans just run at full speed always when plugged into this? Can I power it off the motherboard in any way so I can control it?

The hub can only run at one speed off of the PSU, you will need to look into getting the Grid + V2 if you want individually controllable fans or get fan splitters if you want to group control them from the motherboard.

Do you know what speed th fans will run at when it's powered off the PSU?

They are powered via 12V so they will run at full speed, if you want you can re-pin the molex connector to either 5v, 7v, ot 12v operation. If you are interested in doing that I have a guide here on it under 5V and 7V Mod:

Not if you want to connect more than 3-4 fans depending on the fan since the power is drawn through the motherboard header which most are only capable of 1 amp. That is designed for a high wattage bay fan controller if you wanted to split things off for more connections.
