Will I be ok with my fitbit being on during a flight, or should turn I just turn on airplane mode??

Use airplane mode just so you don't get told off, it doesn't really make too much of a difference anymore though.

The radiative power of Bluetooth is miniscule compared to cell phone radios. Go ahead and turn it on, but be prepared to turn it off if asked to do so.
