AHCI or RAID Mode

i wannt to install RAID/AHCI drivers but i don't understand the benefits 
i have 2 HDD and 1 SSD for my OS

what is RAID, AHCI what is better?
is one for SSD and the other for HDD?

BTW: in the site it says "Note: Windows setup to read from USB thumb drive.".
it means to press [Shift] + Restart to enter "Windows setup"

or to simple install it from Bios?
