After effects, because it is compatible with I think all the adobe file types such as .psd .ai It has a very large array of awesome plug-ins (If that's your thing) and is much more advanced than, I would say most of the other competitors such as Vegas for example. It can be slightly confusing for the new user, but it is a much better program to learn IMO.

After Effects is graphics though, not actual video editing. I myself use it.

What. Of course it's video editing, what else can it be? Premier and After Effects are what literately everyone in the industry uses.

It depends on what you're doing. Premiere Pro and Final Cut Pro are easily the top programs for linear editing however Sony Vegas and arguably Lightworks and Kdenlive(Linux!) are close behind. As for composting there's nothing like After Effects.

I am currently using Grass Valley Edius Neo 3 for my old home videos. I don't really have anything to compare it to so I cannot say whether it is the best etc. I haven't really had any problems with it but there doesn't appear to be a lot of documentation. I just do the basics. Split the captured video into clips and add titles. I have also lightened some dark videos with ease. My mother recorded some dark videos last year at my cousin's wedding reception with here point and shoot. Prior to lightening, the videos were basically garbage because you couldn't see what was going on. I was pleasantly surprised at how well they turned out.

Grass Valley Edius is one that I rarely hear about, but I've seen it listed for $600-700. Does it have professional grade compositing like Premiere and Vegas?

I don't have the 6-700 dollar version. I don't recall how much it was but it was much less than that. I have never used premiere or vegas and I do not know what professional grade compositing is. Sorry for being stupid. That wasn't a very helpful answer.
