I'm thinking about getting some of the kaby lake NUC's for 24/7 vm and video wall work, and I was wondering if putting them in the window during winter would help? I'm also going to put one out in our shed.

It'd probably be better cooling and less thermal throttling if it thermal throttles at all.

If you are using them outside or in more hazardous places for a computer, you might want to use a computer designed to handle the temperature differences, and things like humidity, and temperature changes, putting one outside in a shed isn't a good idea, exposure to the elements even just the moisture in the air will most likely kill it. There are specialized computers tgat are made to handle the elements, salt water, even explosions, you might want something more specialized.
